Dust particles, carbon and other emissions from the engine meet water vapour. Look at the photographs and you will note that the cloud formations indicate water vapour in the air and future precipitation. This is why they hang for so long.

How long a contrail remains and how long it is is dependent on water vapour in the air.

Sounds like a great idea for a film: The POISENEDED Adventure. Just need to add a capsized ocean liner and that's it.
